1-2 Tablespoons A Cajun Life® Blackening Rub for Blackened Chicken (available below)
1/2 Teaspoon Cayenne
2-3 bunches Green Onions
1/2 bunch Parsley
8 Bay Leaves
3-4 Cups Fried Okra
3 oz File Powder
1 Tablespoon Thyme/Paprika
2 Tablespoons Worcestershire
1 Tablespoon white and black pepper
3 cups Quad (chopped Garlic, Celery, Onion, Bell Pepper)
Directions: Lightly saute' sausages then remove Use 1-2 Tablespoons A Cajun Life® Blackening Rub on front and back of chicken and sear on both sides in hot skillet then remove Cook quad 3 mins, then add roux, and stir for 2 mins Next add 1/2 of okra and stir – 2 mins Add seasonings and 1/2 of A Cajun Life® Blackening Rub, plus bay leaves and mix well – 3-4 mins Add beer & Worcestershire then bring to a boil Add clam juice, chicken stock & hot sauce, then bring to a rolling boil Add parsley, green onions, ½ of file, remaining okra & A Cajun Life® Blackening Rub, stir to mix well – 5 mins Add 1/2 of chicken & cook until gumbo is thick, add more seasoning to taste, and file powder to thicken more Serve with herbed jasmine rice, green onion garnish, topped with pieces of blackened chicken
