Pastalaya

Ingredients:
  • 2 tablespoons butter
  • 1 pound boneless skinless chicken breast, cut into 1-inch pieces
  • 1 pound andouille or smoked sausage, cut into ½-inch rounds
  • 1/2 lb Peeled and De-veined Shrimp (optional)
  • 1/2 large onion chopped
  • 1/2 large green bell pepper chopped
  • 2 stalks chopped celery 
  • 1 -2 large tomatoes (about 2 cups) can used canned diced tomatoes
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons A Cajun Life® All Purpose Cajun Seasoning (available below)
  • 1 pound spaghetti or noodle of choice, cooked per package

Directions:
In a large cast iron pot or pan, melt butter over medium-high heat. Add chicken and sausage; cook until browned adding "pinches" of water as needed to make a slight "gravy" by stirring bits off bottom of pan, about 5-10 minutes.. Add onion, bell pepper, celery and garlic and cook until softened, stirring occasionally, about 5 minutes. Add tomatoes, chicken broth, garlic, and A Cajun Life® All Purpose Cajun Seasoning. Bring mixture to a boil, then reduce heat to medium, cover, and simmer until chicken is cooked through, about 15 minutes. Stir in cooked pasta. Garnish with chopped green onion.
